I love summer because it means summer veggies! It turns out that you can use zucchini in so many dishes! My go-to is to roast it as a side dish, but it can go in muffins, cakes, and cookies, as well as slow cooker dinners and soups!
Here’s how to tell when zucchini is ripe and ready to cook:
Size : Ideally 6–8 inches long (baby zucchini are smaller but still tender).Color : Deep green (or yellow for golden varieties), with a glossy skin.Firmness : It should feel firm but not hard—avoid soft spots or shriveling.Skin Texture : Smooth and slightly tender to the touch—not too tough or waxy.
It’s bulging, has wrinkles, or is over 10 inches—larger zucchini can be seedy and watery.
There are nicks, cuts, or soft, mushy areas.
Use ripe zucchini quickly! They spoil fast—store in the fridge for up to 5 days in a perforated bag.
